This recipe was given to me by a friend many years ago. The flavor of the lavender is just right, not overwhelming. Eating these cookies is like bringing all the essence of lavender to your entire being! Use real ingredients for the best results. Margarine just doesn't cut it here!
1/2 cup softened butter
1 cup of sugar
2 eggs
1/2 teaspoon vanilla extract
1 1/2 cups of flour
2 teaspoons of baking powder
1 tablespoon of finely chopped lavender flowers
(make sure they are pesticide free!)
Cream the butter and sugar until light and fluffy. (kind of an odd concept for fat and sugar, don't you think?) Add the eggs and vanilla and mix well. Stir in the dry ingredients.
Drop by 1/2 teaspoons onto a parchment lined baking sheet and bake in an oven preheated to 375 degrees F for 8- 10 minutes. Cool slightly on pan before removing to rack to finish cooling.
